Happy August! Did July go as fast for you as it did for me? I feel like I was just celebrating Canada day a few days ago, but in actuality as I’m typing this it’s already the on of BC day! July was a very busy month  full of hard work with some fun sprinkled in between. We got to see both sides of family this month which was so great. I love spending time with our families, but that’s become even more important since we’re keeping our social circles small.

I’m really looking forward to August. We’re headed to the beach for vacation and I couldn’t be more excited to get away from the house for a few days, enjoy a beautiful beach and eat at restaurants!! On top of vacation we have many beach and lake days planned with friends, family birthdays and household projects planned this month.

  6. June: The One Thing – This book was pretty good, it such a basic concept but sometimes that’s what you need to hear to re focus your thinking.

Let me start this post off by saying I LOVE our house! My husband and I regularly look around and comment on how much we love our home and how lucky we feel to live here. But, I HATE the lack of storage in our entry way!!! When we bought out house I knew we would have to do something about storage for coats and shoes. Since we bought our house from studs I’m sure we could have had our builder put in a nice size coat closet. As overwhelmed first time home buyers we just didn’t think to ask for any changes (lesson learned). So here we are with a great house with ZERO storage in the entryway. Enter the need for a mudroom.

Planning

We decided to add a small mudroom area to our house but the question was where. Since we enter our house from the garage 95% of the time we decided to put the main mudroom in the garage.The next decision we had to make was what type of storage we should have. Benches, lockers, hall trees or wardrobes. We really went through it all. In the end we settled on a large enclosed storage unit. We came to this decision because we felt out coats would be more protected from the dirt and debris that inevitably ends up in a garage. Once we settled on closed storage we had to find custom plans or a pre-made option.

After much searching and measuring we decided to go with a customized Ikea Pax Wardrobe. We went with this option for the following reasons;

  1. It looked easy, I was tackling this project solo so it had to be simple!
  2. The wardrobes come in many different sizes including narrow widths. Since I park on this side of the garage we needed something narrow.
  3. The wardrobe has a sliding door option, this is great since again I park in our garage.
  4. Lots of different interior configurations and options.

I used the Pax Wardrobe planner to map out our needs, we went with two 75cm wide units in the tallest and narrowest size available. I added a pull out coat rack to each, shelves for shoes and another shelf for baskets. I highly recommend using the PAX planner it really made the process painless.

Assembly

Assembly of these units was actually really easy! I was thrilled because I was using these units in part as a trial run for our master closet. The actual boxes were very easy to assemble and place solo. Once I got them where I wanted them I used the anchoring system provided as well as some further reinforcement from my favourite drywall anchor system! We have used these all over our house and they have never failed me. I didn’t want to mess around finding studs to anchor into (I did hit two!) so these were perfect! Once the boxes were up it was time to hang the sliding doors and soft close system.

Now this was the hardest part! Youtube saved me because the instructions for the sliding doors were pretty minimal. Once I got the sliding door system set up I enlisted my husbands help to hang the doors on the tracks. I tried alone but the units are just under 8 feet, so I just couldn’t do it solo.

Once the doors were on I configured our shelves and our coat rack. Once the Pax wardrobe was fully assembled I decided the unit needed handles. I knew adding them would mean the doors wouldn’t open to there full range but I felt having something to grab onto was more important. I ordered these great flush handles of amazon and they were exactly what I was looking for. Once they were installed it was time to fill up the unit with shoes, coats and lay out the new runner (this was a great find!).

Final Product

I’m so happy with how this turned out. The shelves hold the perfect amount of shoes since we only keep our everyday shoes down here. All of our coats fit very comfortably on the racks (I didn’t think they would). And our baskets leave lots of room to grow. I filled one of the baskets with cold weather accessories, and reserved one for storing our sandals in for the winter.

What I love about this unit is that I can move things around very easily as our storage needs change. Like maybe after our first winter we realize we don’t use the baskets. We could remove them and move the self to create more room for shoes. I could even buy another set of shelves and move things around a bit more to create room for more shoes. It’s so great to be able to change things up in the future.

Summer is in full swing here and so is camping season. I grew up camping every summer and still love camping as an adult. Last year was the first time we went camping in a few years and it reignited my love of camping. With camping comes camp cooking, so today I’m sharing my go to camping recipe. I love to prep these camping potatoes and take them up in the cooler. They’re so easy to cook on a bbq or even an open fire. They’re also insanely yummy and go great with everything!

To prep these potatoes for camping is super easy. You could absolutly make them at your campsite, but I prep then in advance. I like to do as much food prep as I can before I leave on a trip. Then I can enjoy every second of camping!

Just slice up the potatoes very thinly (the thinner the better!) and do the same with the onion. Coat with salt, pepper, garlic powder add a tiny bit of olive oil. Place in a thin layer on aluminum foil, top with butter and wrap tightly. I like to throw the foil wrapped potatoes in a large ziplock bag and store in my cooler until I’m ready to cook. They will keep for a few days so you don’t need to rush and cook them right away. But keep in mind that potatoes do oxidize when they’re cut. So they could durn a bit dark if exposed to air. I coat the potatoes in olive oil to try to mitigate that a bit. I promise even if they oxidize they will be delicious but they just might not look so good.

We cook our potatoes on our camp grill, but you could cook them over the campfire. Depending how long we’re camping for I usually double this recipe and serve these with two of our favourite camping dinners. The first night of our trip we always have really high quality steaks with camping potatoes and a big yummy salad. This is such a good summer meal I often make it even if we’re not camping. The other meal we make these potatoes with is grilled spicy Italian sausage, sautéed bell peppers and camping potatoes. This is easily my husband favourite meal to have when camping and just like the steak its so easy (and yummy!).

Foil Wrapped Camping Potatoes

Camping Potatoes

Delicious foil wrapped potatoes, perfect for the campsite.

Ingredients
  

  • 4 white potatoes
  • 1/2 onion
  • 2 tsp olive oil
  • 3 tbsp butter, cut into chunks
  • 1/2 tsp garlic powder
  • salt & pepper to taste

Instructions
 

  • Thinly slice potatoes (1/4 inch think or less) and onion. Toss potatoes with olive oil, garlic and salt and pepper.
  • On a large piece of foil (12-16 inches long) lay out half the potatoes. Top with 1/2 the butter. Layer on the remaining potatoes and top with the remaining butter.
  • Fold up the foil and seal tightly, wrap again in a second piece of foil. Store in a ziploc bag if traveling.
  • Cook on the grill over medium heat for 25-30 minutes turning every 5-10 minutes. Top with your favourite toppings; green onions, sour cream or cheddar cheese. Enjoy!

How are we only halfway through the year? I’m not one to wish time away, but this year has been a long one. So much has changed in everyones life and I don’t think anyone can predict how the rest of the year will unfold. Because of all of the unknowns and life changes I’ve found it hard to stick to and plan future goals. So during the mid year refresh I decided to simplify my goals. I also dropped down from 8 goals to 6.  I figure if I pair down my goals I’m more likely to achieve them given that life still looks very different than it did before. You can read about my original 2020 goals in this post, but here is a look at the changes from my spring refresh.

July will be a pretty quiet month for me since my husband’s business is super busy right now (which is fantastic!) we’ve held off on any summer travel until August. But I still want to make sure we get out to have fun as a couple as well as with our friends. We also have a few family birthdays to celebrate, so this month should be a lot of fun.

On Sunday’s I like to go all out an make a really delicious dinner. I make lots of sides and sometimes I even make dessert, all from scratch. We have a nice glass of wine and linger at the table a little longer then normal. This is one of our favourite weekend traditions. These biscuits are a highly requested Sunday night side. They go well with just about everything.

Easy Cheddar Biscuits

Super Simple Cheddar Biscuits

These biscuits are so savoury and delicious. They’re rich yet light and so easy to make. The chives in these biscuits add a delicious light onion flavour to these biscuits that pairs really well with cheese in these biscuits. Plus the chives cut the richness in the biscuits and add a freshness.

I love to serve these at a bbq, but I’ve brought these to thanksgiving before and they were a big hit. They’re also super delicious with chicken soup. And if there are leftovers they go great with eggs and bacon for breakfast! I’ve even make these in a large size and used them for egg sandwiches (so yummy!).

Cheddar Biscuits

These biscuits are also super easy to make. They only use one bowl and since they are drop biscuits there’s not rolling and cutting. Just scoop them out, and drop them on the tray! So dang easy and such a crowd pleaser. Let me know if you try these, I’m sure you’ll love them!

Cheddar Biscuits

Cheddar Drop Biscuits

Cheesy, buttery drop biscuits. The perfect side year round.

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 cup salted butter, cubed
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 2 tbsp salted butter, melted
  • 2 tbasp chives, chopped

Instructions
 

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper, set aside.
  • In a large mixing bowl whisk together flour, sugar, baking powder, baking soda, salt, pepper and garlic powder. Add butter and cut into mixture using a pastry cutter or fork until butter is coated in flour and is the size of peas. Add in cheddar cheese, chives and stir to combine. Pour in milk and stir until mixture comes together.
  • Scoop dough out a heaping 1/4 cup of dough per biscuit. Space evenly on baking tray. Bake for 12 minutes. Brush with melted butter and return to the oven for 3 minutes or until tops are golden brown. Serve warm.

I love summer, long evenings, camping, days at the lake and all the yummy food and treats at a cook out! Does anything beat it? I really don’t think so. With the first summer celebration coming up on Wednesday (Canada Day!) Although were staying home and having a bbq for two (thanks COVID). I still wanted to find a refreshing, easy, healthy and delicious summer treat to make. Enter Watermelon and Strawberry popsicles! Not only are these delicious, but dessert is already made for Canada Day.

Watermelon Popsicles

I wanted to create a popsicle that was healthy and guilt free. I find I reach for fruity treats often in the summer and I’d rather them be a healthy option. These popsicles are simply blended fruit! Yep that’s all, there’s nothing more to it.

Ingredients

  • Watermelon
  • Strawberries
  • Lime Juice

Just blend your fruit together until smooth, pour into popsicle tray (I used this one), freeze and enjoy. Isn’t that insanely easy? Yep! These were fun to make too so I think it would be fun to involve your kids in making them as well.

I’m sure you noticed there was no sugar or sweetener in my ingredients list. That’s because I find the blended fruit plenty sweet enough. But if you want things a bit sweeter, or your fruit is a little under ripe you could add a tablespoon or two of honey. Of course you could just use sugar, but I like to keep this natural whenever possible. Plus honey and watermelon is a winning combination!

Now you could make these popsicles adult by spiking with your liquor of choice, you could add extra lime and tequila for a watermelon margarita popsicle (YUM!). Or place an unskilled popsicle in a glass of champagne or prosseco for a super fun cocktail! Just make sure you mark which tray is for the grown ups!

I know I’ll be making these all summer long and I hope you all do too! Enjoy and stay safe this Canada Day (and 4th of July).

Healthy Popsicles

Watermelon Strawberry Popsicles

A healthy sugar free summer treat.

Ingredients
  

  • 4 cups watermelon
  • 1 cup strawberries
  • 1/2 lime, juiced

Instructions
 

  • Place fruit and lime juice into a blender. Blend until smooth.
  • Pour into a popsicle mould and place in the freezer. Freeze for a minimum of 6 hours.
  • Run under warm water to release from trays and serve!

Notes

Optional:
If you like things more sweet add 1-2 tablespoons of honey.
If you want to spike these popsicles add 6 tbsp of your favourite hard alcohol.

As a teen I was one of the lucky ones who didn’t struggle with acne. Like most kids I got the occasional pimple, but over all I was pretty lucky. Fast forward to adulthood and that all changed. Slowly through college my skin started to become more acne prone and by 23 I had some serious hormonal cystic acne.

My Acne Clearing Products

I battled deep cystic acne on my chin and forehead. If you’ve ever experience pimples like this you know they are painful. My face was literally in pain everyday, it was not fun. And to top if off my oil production was out of control which caused my makeup to slide off my skin. You know the makeup that was there to cover up the giant red painful pimples. Over the past few years I’ve tried product after product, complicated regimes and many dietary changes and finally it’s under control. So today I’m going to share with you the products the cleared my skin.

Cleanser:

The first product I want to share is my cleanser I use it morning and night. You can feel the deep cleanse this gives your skin. It reached much deeper then a lot of other cleansers and was key in keeping my oil production at bay. I can’t recommend the First Aid Beauty Skin Rescue Deep Cleanser with Red Clay enough.

How I cleared my cystic acne

Treatment:

I cannot sing the Dr. Dennis Gross Extra Strength peel pads praises enough. These should be in every acne sufferers regime! I started using the regular strength version before my wedding and they seriously saved the day. Since then I’ve been a total convert. I’ve worked my way up to the extra strength version and see such an incredible difference in the number of breakouts I get, how long they last and over all quality of my skin. I used these daily to clear my skin and now I use them every few days. If there’s one product on this list you try make it these!

Peel Pads

Serum:

I love this Mario Badescu Vitamin C Serum I put in on every morning before my moisturizer and it not only makes my skin glow but it also fades my acnes scares! If you struggle with acne you know that those deep pimples leave their redness behind long after they are gone. This serum have greatly improved my acne scarring and improved the low and feel of my skin.

Moisture:

I’m still on the hunt for the prefect daytime and night time moisturizer but one product that locks in the moisture to my skin that I love it The Ordinary’s Hyaluronic Acid. I started using this because the peel pads are a chemical exfoliant and although not harsh they can be a bit drying. The addition of a moisture locking product solved any dry skin issues I was having and plumped and brightened my skin. Plus you just can’t beat the price. Win, win WIN!

Treatment for Cystic Acne

Spot Treatment:

I have two amazing products I use for spot treatments. The first has been in my arsenal for many years and it’s the Mario Badescu drying lotion. I have used this on all pimples and it works by drying out the contents of you pimple. It works great and speeds up the lifecycle of the pimple tremendously.

Skin Clearing Products

My second spot treatment is the Cosrx Acne Pimple Master Patch. These magic patches pull out all the crap in you zit. I sleep with them on over night and when you wake up and remove the patch you pimple will be considerably smaller. These are my favourite and most life saving product. The only con is they don’t work on blind pimples for those I use the drying lotion.

If you’re struggling with acne I hope I was able to introduce you to a new product or idea to try. Your skin is so important and closely tied to self esteem. For me investing in my skin and improving it has made me so much happier. I hope you have the same success.

If you’ve been around a minute then you will remember that last year we bought our first house. This is the first place we’ve lived that we could decorate and make our own. And honestly that was super overwhelming. When we moved in we had barely any furniture and no design direction. Now that we’ve been here almost a year I’m finding my way and slowly chipping away at little projects to upgrade our new build home. The first room I wanted to start with was our master bedroom. Over the first six months in our  home we replaced our mis matched college dressers to nice clean white dressers and night stands and upgraded from a metal bed frame to a beautiful upholstered bed. From there I knew I wanted to add moulding or create some kind of interesting feature in our space before I finished the room with decor.

Master Bedroom Makeover

Planning:

That when I went to Pinterest, I searched high and low for a simple wall treatment for beginners and settled on creating a board and batten grid wall. After loosely reading tutorials from Angela Rose Home and Young House Love I was ready to get started.

First up measuring the wall and determining the size of the squares. For us since the wall behind our bed is not very big we didn’t want to have too many squares and create a busy design. To start I drew out two options. Option one had four vertical columns and three horizontal rows and option two had five vertical columns and four horizontal rows. I measured and drew our the plans for both on a sheet of paper. We then mapped out the size of the squares using painters tape. This was such a great visual for us and helped us choose option one. Not only was option one the ascetic we were hoping for but it seemed like a slightly easier design for these newbies to handle. Now that we settled on design it was time to gather materials and tools.

Tools and Supplies:

  • 3 1/2 inch primed mdf trim
  • tape measure
  • level
  • miter saw
  • brad nailer w/ 18 gauge nails
  • wood filler
  • putty knife
  • caulk
  • caulking gun
  • sandpaper
  • paint (we used Benjamin Moore Cloud White)
  • paint brush, roller, tray
  • drop cloth
  • optional: palm sander

Once the design is complete and the materials were gathered it was time to get started on the wall/ We split this project up into three steps.

Step 1: Install Board and Batten

For our design we decided to keep our existing trim on the wall, add a piece of trim flush to the left and right corner and one to where the top of the wall where it meets the ceiling. Then add the vertical trim and then fill in the horizontal rows. To us this seemed most logical, but any order would work.

We used our miter saw to make our cuts and attached the trim to the wall using the brad nailer. We chose not to use liquid nails for this since the MDF is light. I figured between the nails and caulking it to the wall it would be plenty secure (it defiantly is). Since we didn’t use liquid nails if we ever decide to remove it there should be less damage on the wall to deal with.

 

My husband and I tag teamed the install of the board and batten in and evening after work. We were quite surprised how easy and fast it was. Considering neither of us had used a miter saw or nail gun this project was super painless and I can’t wait to see how easy our next project like this will be.

The next morning I tackled filling and caulking the wall. From here on out I worked solo and learned I am extremely skilled at filling holes, who knew!

I started out by filling all the nail holes and joints with wood filler. My biggest time for patching landfilling holes is to use more then you think you need and don’t rush the drying time.

Once the wood filler was dry I sanded. I started with the palm sander and switched to regular old sand paper once the putty was mostly gone. After I finished sanding I went over any holes that weren’t 100% flat and smooth with more wood filler. Once dry I sanded again, this time just with sand paper. Once all the holes were filled and sanded it was time to caulk. I applied caulk anywhere the trim touched the wall, so the inside of each square and the corners/ceiling. I let that fully dry before moving on.

Now came the easy part PAINT! I taped off the ceiling, side walls and outlets and got to painting the wall and trim. We chose to use the same white paint as our existing trim for this wall since we wanted the transition from wall to baseboards to be seamless. I used a paint brush to cut in a mini roller for the trim work and a regular roller for the inside of the squares. After two coats the wall was done and it was time to remove the tape and re attach the outlet covers.

I am obsessed with how the wall turned out. The bright white paint helps to make out bed pop in the room and the moulding add so much interest and really elevates the room to another level. This project also gave us a lot of confidence to take on other small cosmetic projects around the house (shiplap stairwell anyone?) which is fantastic as new home owners.

Now that this project is complete it’s time for me to decorate the space!! I’m so excited to hand art and wedding photos on the walls, buy cute but functional design pieces and maybe even hand some killed sconces by the bed! Oh the possibilities.

Two Ingredient Flax Crackers

I am always on the hunt for healthy and yummy snacks so when I come across a recipe that’s super simple filling and healthy I have to try it. Since I follow the F-Factor diet (read about it in my monthly goals) getting as much fibre into my system everyday is super important to me. When I saw Megan Shanley’s flax cracker recipe on instagram I knew I had to try it out and make it my own. I have been making these non stop for a few months. I tweaked the recipe to my liking, and now I’m ready to share this with all of you.

The main ingredient in these crackers are flax seeds you will get tons of fibre and omega-3’s in every single serving. Pair them with a your favourite dip or spread and I think you will be blown away by how satisfying such a simple snack can be. Personally I like to spread a little bit of herb and garlic cream cheese on them or even use them as a salad topper. Another thing I think they would be yummy with is some salmon or tuna salad. That’s next up for me to try!

The method to make these crackers is super simple. Just soak the flax seeds overnight, mix it one egg white and the seasonings of your choosing. My favourite combo is rosemary, garlic and onion. Then spread the mixture out on a baking sheet and bake at 275°F until the crackers are nice and crispy! Once they are cooled break them into small pieces and enjoy. See what I said, they’re super easy!

Ingredients
  

  • 1 1/4 cup whole flax seeds
  • 1/3 cup water
  • 1 egg white
  • 3/4 tsp salt
  • 1 tsp rosemary
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder

Instructions
 

  • Mix flax seeds and water together in a bowl. Soak for 12 to 18 hours in you fridge.
  • Preheat oven to 275°F Mix soaked flax seeds with egg whites salt and seasonings.
  • Line a baking sheet with partchment. Pour cracker mixture onto partchment. Use a second piece of partchment to press out the mixture into and even layer about 1/4 of an inch thick.
  • Bake for 45-60 minutes until the cracker is dry and the edges pull away from the partchment. Break into small pieces and enjoy.

Hi friends, happy June! May was a really fun month between my birthday, Mother’s Day, long weekends and the loosening COVID restrictions my goals took a backseat. Sometimes having fun is better then accomplishments!

I’m super excited to see where June takes us since this month is full of celebrations and fun! I’m also excited to get back into my Power Sheets and dig into my goals for June! As things with COVID improve here I find myself looking forward to summer and getting creative with how to have fun while keeping our bubble small and staying local. With that said lets get into a fun and productive month!

June 2020 Goals

WHAT’S HAPPENING IN JUNE:

  • Our second wedding anniversary
  • My Dad’s birthday
  • Father’s Day
  • The first day of Summer!

WHAT I LOVED IN MAY:

  • Celebrating my birthday with socially distanced time with family, zoom parties with friends and a romantic evening with my husband.
  • Getting to see my parents, celebrate Mother’s Day and add them to our “bubble.”
  • Starting a new Sunday morning tradition of picking up coffee and going to the beach.
  • Starting Hal Elrod’s practice of The Miracle Morning.

BOOKS READ:

  1. January: F-Factor Diet – I’m following (and loving) Tanya Zuckerbrot’s F-Factor Diet, so this was a must read and was so informative!
  2. February: Is everyone Hanging out without me? – I started but did not finish. The first third had me laughing out loud and I’m excited to finish it this month.
  3. March: Girl Wash Your Face – I started this book a few years back, but finally revisited it and finished in March.
  4. April: No book this month
  5. May: The Miracle Morning – After feeling like my work from home mornings were chaotic I decided I needed to make a change. This book has helped tremendously with implementing a morning routine that enters my mind, works out my energy and prepares me properly for the day.

REVISITING MAY GOALS:

  • Celebrate my birthday well
  • Finish the office organization – Our files are organized (yay!), but we really need to buy a piece of storage furniture before this project will be 100% complete.
  • Finish the closet organization
  • Reconcile March and April spending
  • Write Q1 and April journal

  • Plan & Celebrate our second wedding anniversary!
