Method
- Chop a head of cauliflower into large pieces. Place chopped cauliflower (florets, core and steam) and two cloves of peeled garlic into a steamer basket over simmering water. Steam cauliflower and garlic for 10 minutes or until fork tender.
- Add steamed cauliflower and garlic, butter, parmesan, salt and pepper. Pulse on high to break the cauliflower into small pieces.
- Add 1/4-1/2 cup of the steaming liquid to thin mixture to desired consistancy. Continue to blend in food processor until completly smooth.
- Taste mash and add additional salt and pepper if desired. Serve immediatly.
