Garlic Parmesan Cauliflower Mash

Cauliflower mash is a low carb twist on classic mashed potatoes. This version is flavoured with garlic and parmesan cheese.

Ingredients
  

  • 1 head cauliflower
  • 2 cloves garlic
  • 1.5 ounces parmesan cheese, grated
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Chop a head of cauliflower into large pieces. Place chopped cauliflower (florets, core and steam) and two cloves of peeled garlic into a steamer basket over simmering water. Steam cauliflower and garlic for 10 minutes or until fork tender.
  • Add steamed cauliflower and garlic, butter, parmesan, salt and pepper. Pulse on high to break the cauliflower into small pieces.
  • Add 1/4-1/2 cup of the steaming liquid to thin mixture to desired consistancy. Continue to blend in food processor until completly smooth.
  • Taste mash and add additional salt and pepper if desired. Serve immediatly.
