Hearty Vegetable Soup – like Grandma made

Today I’m sharing one of my favourite soup recipes. Not only is it super yummy, filling and packed with nutrition it’s also super nostalgic. My Grandma used to make this delicious vegetable soup. It was based off an old weight watchers recipe and was full of veggies from her massive garden. I loved eating that soup. My mom has tried to recreate it before and has gotten close but it just never tastes quite the same.

Now funny story, I wasn’t trying to copy her soup. It wasn’t until I was on my second bowl that I realized something about it was so familiar. I guess when I think vegetable soup I think of the flavours in my Grandma’s. I like to think she’d like this unintended version. Although I don’t know how she would feel about all the extra herbs I added, she was a simple salt and pepper gal.

For this soup I used vegetable broth (duh!) and fire roasted tomatoes as the base. Now of course you can use regular tomatoes but the extra flavour fire roasted adds lots of extra flavour.

As for the veggies here’s what I like, onion, carrots, zucchini and green beans and cherry tomatoes. Of course you can add whatever vegetables you love you’ll just have to adjust the cook time.

Now unlike Grandma I have a cupboard full herbs, spices and vinegars. I really went to town on the Italian seasoning in this recipe and finish it off with a nice splash of rice vinegar.

This soup is flavourful, filling and so good for you. Now to just make my self half a ham sandwich on white bread to eat with it, like Grandma would!

Hearty Vegetable Soup

An accidental reincarnation of my Grandma's famous vegetable soup recipe. Packed with hearty vegetables this is the perfect lunch or side dish.

Ingredients
  

  • 2 tbsp Olive Oil
  • 1 Onion, finely diced
  • 3 Carrots, sliced
  • 1 Zucchini, sliced
  • 1 1/2 cups Green Beans, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 15 oz can Fire Roasted Tomatoes
  • 8 cups Vegetable Broth
  • 2 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1 tbsp Rice Vinegar
  • Salt & Pepper to taste

Instructions
 

  • Add olive oil to a large pot or dutch oven over medium low heat. Add diced onions, cook for 5-7 minutes or until soft and translucent. Add carrots, italian seasoning, garlic, salt and pepper. Cook for 2 minutes.
  • Turn up the meat to medium. Add canned tomatoes and vegetable broth. Simmer for 10 minutes. Add the remaining vegetables to the soup, cook over medium low for 15-20 minutes or until the green beans and carrots are tender.
  • Stir in rice vinegar. Taste the soup and adjust salt and pepper to your desired taste.
  • Enjoy soup on it's own or with a piece of crusty bread.

Healthy Fall Sheet Pan Supper

Fall Sheet Pan Supper

I love a simple one (or two!) pan meal! Sheet pan dinners are part of my weekly rotation. I make a variation of this meal every season! I’m sure you’ve made a sheet pan supper before, they are so simple. Choose a variety of seasonal vegetables we approximately the same cook time. Add them to a pan with your favourite protein, easy and delicious!

For this meal I chose butternut squash, potatoes and brussels sprouts. For the protein I chose chicken breasts, because I wanted this meal to be fast! I made a quick marinade for the chicken to give it lots of flavour. The marinade had soy sauce, garlic, maple syrup, dijon mustard and thyme. It was super yummy and differentiated the flavours of the chicken from the vegetables. For the vegetables, I kept it simple. I love the flavour of vegetables and didn’t want to over power them.

I made this recipe with 4 chicken breast, so to fit all of the vegetables you may need to use two sheet pans. You need the vegetables to be spread out in a single layer to get crispy bits, so make sure not to over crowd the pan! Believe me, you want crispy bits!! So yummy!

Once all of your vegetables and chicken are on the sheet pans, bake for 30 minutes, yep thats it! Easy, healthy, seasonal, delicious and fast! Give this recipe a try! I hope you really enjoy it.

Ingredients
  

Chicken

  • 4 chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tsp dijon mustard
  • 2 garlic cloves, crushed
  • 1 tsp dried thyme
  • salt & pepper, to taste

Vegetables

  • 1/2 butternut squash, chopped into 1/2 inch pieces
  • 3 white or yukon gold potatoes, chopped into 1/2 inch pieces
  • 1/2 pound brussels sprouts, trimmed and cleaned
  • olive oil
  • 2 tsp dried thyme
  • salt and pepper to taste

Instructions
 

Marinade

  • Whisk together olive oil, soy sauce, mustard, garlic, thyme, salt and pepper. Place chicken in a resealable bag or air tight container, pour marinade over chicken. Place in the fridge for a minimum of one hour, or overnight.

Sheet Pan Supper

  • Preheat oven to 400 °F.
  • Place vegetables in a large bowl, toss with olive oil (about 2-3 tbsp), thyme, salt and pepper.
  • Drizzle 1-2 sheet pans with a small amount of olive oil. Arange marinated chicken breast on the pan. Arrange vegetables around chicken breast in a single layer. Bake for 30-35 minutes or until chicken is cooked though and vegetables are tender. Serve and enjoy!

White Chicken Chili

Today I am sharing my go to slow cooker meal. It’s delicious, super filling and pretty healthy (if you go light on the Fritos! lol). White Chicken Chili is the best, it’s super flavourful, takes basically no prep time. Perfect weeknight meal. Oh and you’ll have leftovers! Win!!

I love soups, stews and chilis in the fall and winter. I just find then so satisfying and super easy to make, but my husband isn’t a big soup fan. He’s a big strong man and likes a big plate of hearty food. He just doesn’t see soup as a meal. And he doesn’t like most chilis because tomatoes give him heartburn. So thats where this recipe saves the day. It’s hearty and there’s no tomatoes, it’s a serious winner. He actually asks for this meal regularly (could just be the Fritos!). And I happily oblige since it takes five minutes and it feeds us for days!

So lets run down what makes this recipe so great.

  1. Canned Green Chilies, seriously yummy! Basically makes everything taste like queso blanco and adds delicious flavour to this chili
  2. Jalapeños, add just the right amount of heat. Remove or don’t remove the seeds to adjust the heat to your liking. I like one with and one without.
  3. White Beans, they make this chili so hearty and filling
  4. Cream Cheese, this is what makes this chilli creamy. Yep, no cream in sight! It’s perfect and my secret weapon!
  5. Spices, don’t skimp on the cumin! Heck add extra if you want!

This recipe really is one of those no recipe recipes. You chop a few ingredients and other then that just toss everything in and let the slow cooked do it’s magic. It’s really that simple! Add your favourite chili toppings and get to eating!

Ingredients
  

Chili

  • 3 chicken breasts
  • 2 15 oz cans white beans, drained
  • 2 4 oz cans green chilies
  • 1 cup frozen corn
  • 2 jalapeños, chopped (remove seeds and ribs for a mild chili)
  • 1/2 onion, diced finely
  • 4 oz cream cheese
  • 2 cups low sodium chicken broth
  • 3 tsp chili powder
  • 1 tbsp cumin
  • salt and pepper to taste

Toppings

  • cheddar cheese, shredded
  • avocado, sliced
  • fritos or tortilla chips

Instructions
 

  • Place chicken, beans, chilies, corn, jalapeños, onion, cream cheese and broth in you slow cooker. Add spices and stir. Place slow cooker on low for 8 hours or on high for 4.
  • Once chili is cooked remove chicken. Shred and return to the slow cooker. Taste broth and adjust seasonings accordingly.
  • Prepare desired toppings and serve.

Eggplant and Italian Sausage Pasta

I don’t know about where you live but here in BC it has been a wet September. September seems to go one of two ways here, the longest hottest days of summer, or rain, rain and more rain. This year we have had the latter. Since the weather has been blah I’ve been able to dip into my fall recipes a bit sooner then normal. And of course I’m like every other girl out there and love fall. I mostly love sweaters and Thanksgiving, but I also really enjoy fall flavours and heartier dishes.

So since it’s fall here I’m sharing a new fall pasta recipe. A one pot pasta with eggplant and Italian sausage. It’s so yummy and is now a new favourite!

Let’s talk ingredients, it’s pretty simple here and most of these items are things I’m sure you have on hand. Your favourite short pasta shape, I love fussili. A delicious eggplant, Italian sausage, some canned tomatoes, a little wine, shallots, garlic and parmesan. So yummy!

Now the method here is simple, cook your pasta, set aside and start combining the sauce ingredients. This does take a tiny big longer then some of the one pot recipes out there since you really want to cook down the eggplant. I want melty velvety eggplant. It’s a total game changer in the sauces texture. If you think you’ve over cooked the eggplant it’s probably perfect. All the delicious flavours meld together to create a really rich flavourful sauce.

I like to serve this pasta with a super simple arugula salad, just arugula, shaved parmesan, lemon, oil and black pepper. Such a yummy bright compliment to the dish. You also can’t go wrong with a big glass of red wine to wash it all down. Also eating this by the fireplace makes it extra magical, but if it’s still summer where you are you may want to skip that. I hope you give this yummy dish a try!

One Pot Eggplant and Italian Sausage Pasta

A velvety smooth sauce with eggplant, tomato and red wine. Chucks of sweet Italian sausage and lots of parmesan cheese.

Ingredients
  

  • 1 pound fusilli pasta
  • 5 tbsp olive oil, divided
  • 1 pound Mild Italian Sausage, casings removed
  • 1 shallot
  • 2 cloves garlic
  • 1 medium eggplant, chopped into 1/2 inch pieces
  • 1/3 cup red wine
  • 1 15 ounce can whole plum tomatoes
  • 1/2 tsp red pepper flakes
  • salt & pepper
  • 1 cup fresh grated parmesan cheese (additional for topping)

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions. Set aside 1 cup of pasta water, drain and set aside.
  • Heat 3 tablespoons of olive oil in pot over medium-low heat. Add shallots and garlic to pan, cook for 1 minute until fragrant. Add sausage to the pan. Break into small pieces and brown until cooked through.
  • Deglaze the pan with wine. Simmer for 2 minutes until reduced. If the pan is dry add remaining olive oil. Add eggplant to the pan. Turn heat up to medium and cook for 10 minutes, or until beginning to soften.
  • Break up tomatoes with your hands. Add to pot. Season with salt, pepper and chili flakes. Cover and simmer for 15 minutes. Taste sauce and adjust seasonings if needed.
  • Lower heat, add pasta and cheese to sauce. Stir together. Add pasta water to loosen as needed, I typically use 1/3-1/2 cup. Top with additional Parmesan cheese and enjoy!

Classic Cheeseburger

I’ve been teasing this recipe for a few weeks now and it’s finally time to share! My recipe for the most delicious and juicy cheeseburger you will ever make!

I don’t eat a ton of red meat, but when I do I want it to be a perfectly cooked steak or the juiciest cheeseburger. Every few weeks I will crave a delicious cheeseburger and let’s get real a drive thru burger, or a pre made patty just aren’t going to cut it! One of two things happen; we order burgers from this amazing burger only restaurant we love (Bin4, get half salad half fries and the truffle aioli… thank me later!), or I make these burgers!

Now these burgers are pretty classic, there’s nothing surprising about the ingredients. The secret here is that the mix ins make this burger patty a touch wetter then other recipes. This really helps keep the burgers extra juicy! Another thing that takes these burgers tot he next level, good quality cheese. Sorry guys no kraft singles or American cheese in this house. Delicious high quality old cheddar cheese. My favourite brand for this is Armstrong.

Other then the ingredients in this burger the most important steps to get a juicy burger is in the mixing! Do not over mix your meat, if you do the burger texture will be weird. It gets tough and starts to resemble meatloaf not a meaty juicy burger.

Now for this you have to use your hands… I know I don’t like it either but it really is the only way to combine the ingredients and form the patty’s. Remove your rings, wash your hands and get in there.

My final tip to make abetter burger is to make a well in the middle of the patty. This way the burger won’t puff up into a round ball, it will stay nice and flat.

Classic Cheeseburger

Ingredients
  

  • 1 pound lean ground beef
  • 1 egg
  • 1/4 cup onion, minced
  • 2 garlic cloves
  • 1/4 cup breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 slices sharp cheddar cheese
  • 4 buns (I used pretzel)
  • burger topping of your choice

Instructions
 

  • Add beef, egg, onion, garlic, breadcrumbs, Worcestershire sauce, dijon mustard, salt and pepper to a bowl. Using your hands gently combine mixture. Form meat into four burger patties. Place on a sheet pan, press a well into the centre of the patty.
  • Preheat your barbecue to high heat. While the grill heats prepare your buns (I love pretzel buns!) and toppings. Suggested toppings: lettuce, tomato, onion, pickles, ketchup, mayonnaise and mustard.
  • Grill burgers over high heat for 7 to 8 minutes per side with the lid closed. Add cheese in the final minute of cooking. Remove from grill and assemble burgers.

Szechuan Noodles with Garlic Chili Oil

We love to cook asian inspired food in our house. It’s easily my husbands favourite cuisine and it’s in my top 3 as well. What I love about cooking with asian flavours is that the meals are so fast to throw together and they are so versatile. You can swap our flavours and re invent or refresh a dish so easily. And I freakin’ LOVE noodles!! Give me all the noodles. I really love them. Ramen, rice noodles, vermicelli, egg noodles; bring them all on. Today we’re making long broad egg noodles (tagliatelle woks in a pinch!) sautéed with bok choy, red onion and ground turkey, drizzled with spicy garlicky chili oil. Seriously yummy and so so flavourful!

This recipe is essentially two recipes in one. Part of what makes this recipe so delicious is the amazing chili oil!! It’s super tasty and allows everyone to determine their own heat level for this dish. The great thing about this oil is that you can make extra and keep it in your fridge for topping other things. I love a little drizzle on pan fried chicken or even added to a skillet of veggies for some extra flavour.

Now the base of this noodle bowl is so simple to throw together. The noodles, ground turkey and bok choy cook up so fast. This whole recipe only takes 30 minutes to prep and make! Which is perfect because that’s about all I have time for on a weeknight.

This is a must try if you’re a noodle fan! Enjoy!

Szechuan Noodles with Garlic Chili Oil

Delicious asian inspired dish. Broad egg noddles tossed with sautéed bok choy and ground turkey. Top it off with spicy garlic chili oil.

Ingredients
  

  • 1/4 cup coconut oil
  • 4 colves garlic, sliced
  • 1 tsp red pepper flakes
  • 1 tsp ginger, minced
  • 2 tbsp sesame seeds
  • 8 ounces broad egg noodles (asian preferred, but can sub tagliatelle)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup rice wine vinegar
  • 1 tbsp brown sugar
  • 2 tbsp chili paste (sambal oelek)
  • 1/2 pound ground turkey
  • 1/2 red onion, thinly sliced
  • 4 green onions, chopped
  • 4 baby bok choy, trimmed

Instructions
 

  • In a wok melt coconut oil over medium heat. Add garlic, red pepper and ginger to the oil. Cook for 5 minutes until garlic softens. Add sesame seeds and cook for another minute. Pour into a small bowl and set aside.
  • In a large pot cook egg noodles according to package instructions.
  • Meanwhile whisk together soy sauce, vinegar, brown sugar and chili paste and set aside.
  • Brown turkey in a wok over medium high heat. Season with salt and pepper and continue to cook for about 5 minutes. Add red onion, green onion and sauté for 2-3 minutes or until the red onion begins to soften. Add sauce and bok choy to the pan. Simmer sauce until it thickens and coats turkey, about 5 minutes.
  • Add cooked noddles and two tablespoons of chili oil to the wok. Toss to coat. Serve in a shallow bowl. Top with remaining green onions and additionally chili oil if desired. Yum!
